Cooking time varies depending on 1) the type of cooktop used, gas or electric, and 2) the material and construction of the pan used. The cooking times in my recipes are based on an electric cooktop. When using an electric cooktop there is a so called “heat lag” period when increasing or decreasing the temperature. It’s much easier and faster to control the temperature with a gas burner, whereas with an electric burner it takes longer for the heating element to heat up or cool down.
