Tomato Cucumber Salad

A Persian dinner table is not complete without a bowl of this easy and healthy tomato cucumber salad, also called salad shirazi, made of tomatoes, Persian cucumbers, and onions. This delicious and refreshing tomato cucumber salad compliments most Persian dishes. The salad is dressed with extra virgin olive oil, fresh lemon juice, salt and ground black pepper. If you prefer a real sour dressing like some people do, just use lemon juice. You can also add dried mint leaves to the dressing. Regardless of how you dress this tomato cucumber salad, it’s a yummy must on every Persian dinner table.

INGREDIENTS

6 large Persian cucumbers or 2 English cucumbers
4 large tomatoes
1 small red onion
¼ cup extra virgin olive oil
¼ cup or less fresh lemon juice
1½ teaspoons salt
¼ teaspoon black ground pepper

INSTRUCTIONS


Rinse cucumbers and cut the ends off. Peel and dice into ¼-inch cubes. Rinse and core tomatoes. Dice into ¼-inch cubes. Cut the ends of onion, peel and dice into ¼-inch cubes.

Combine chopped cucumbers, tomatoes and onions in a large bowl. Whisk together olive oil, lemon juice, salt and pepper in a small bowl. Pour over the salad and mix to combine. Taste and adjust seasoning.

To make chopped onions less pungent, place in a colander and hold under cold running water for few seconds. Spread on paper towel to drain or pat dry before using.
